Italian Cuisine - Italian Herb Bruschetta Chicken

Italian Herb Bruschetta Chicken

Ingredients :

For The Chicken:

2 large boneless, skinless chicken breasts halved horizontally to make 4 fillets

3 teaspoons Italian seasoning

2 teaspoons minced garlic

salt to taste

1 tablespoon of olive oil (for cooking)


For The Topping:

4 Roma tomatoes finely chopped

1/4 of a red onion finely chopped (or 3 cloves finely chopped garlic)

4 tablespoons shredded fresh basil

2 tablespoons olive oil

salt to taste

½ cup freshly shaved parmesan cheese


Balsamic Glaze:

1/2 cup balsamic vinegar

2 teaspoons brown sugar (OPTIONAL)


Instructions :

Season chicken with Italian seasoning, garlic and salt. Heat oil in a grill pan or skillet, and sear chicken breasts over medium-high heat until browned on both sides and cooked through (about 6 minutes each side). Remove from pan; set aside and allow to rest.

Combine the tomatoes, red onion, basil, olive oil in a bowl. Season with salt. Top each chicken breast with the tomato mixture and parmesan cheese.

Serve immediately with balsamic glaze (optional).


Balsamic Glaze:

(If making from scratch, prepare while chicken is cooking.) Combine sugar (if using) and vinegar in a small saucepan over high heat and bring to the boil. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze. (If not using sugar, allow to reduce for 12-15 minutes on low heat).


RECIPE NOTE:

*If you don't have Italian seasoning, use Italian dried herbs. Or combine 1 teaspoon dried oregano, 1 teaspoon dried basil, and 1 teaspoon dried parsley together.

Ricotta and Prosciutto Cracker Appetizer

Ingredients :

7 oz Happy farms® Ricotta Cheese

1 tbsp minced garlic

1 1/2 tsp olive oil

3 ounces Specialty Select® Prosciutto

Salt and pepper to taste

Berryhill® Clover Honey for drizzling

1 box Savoritz® Salt Crackers (about 45 crackers)


Instructions :

In a small bowl, mix ricotta, garlic, olive oil, salt and pepper together. Set aside.

Cut prosciutto into triangles. The triangles should be small enough to top your crackers (see photos above).

Using an off-set spatula, smear just enough of the ricotta mixture onto each cracker, until each cracker is thinly covered.

Roll each prosciutto triangle into a small cone-like shape and place each on a ricotta coated cracker.

Once all crackers are coated and topped with prosciutto, drizzle a small amount of honey over each. Serve immediately.

Classic Italian Pasta Salad

Ingredients :

1 lb. tri colored rotini pasta, uncooked

1 tsp olive oil

1 cup broccoli florets, cut into small pieces

1 1/2 cups thick sliced English cucumber

1 red bell pepper, seeded and chopped

1 (6 oz) can medium black olives, sliced

1/2 of a purple onion, diced

1 cup sliced pepperoni, quartered

1 1/2 cup Italian salad dressing


Instructions :

Bring a large pot of water to a boil and add the pasta and 1 tsp olive oil. Cook until the pasta is al dente, and then add the broccoli florets. Cook 2 more minutes and then stain pasta and broccoli in a colander and run cold water over it until the pasta and broccoli are cooled. Drain completely and set aside.

In a large bowl combine the sliced cucumber, red bell pepper, olives, onion and pepperoni. Add in the pasta and broccoli and stir to combine. Pour in the dressing and toss to coat.

Cover and store in the fridge until ready to serve (up to 4 hours ahead of time for best results). Stir again before serving. Enjoy!!!
